Visual Moutai | Peng Chao: 30000 li journey every year plus Moutai liquor making

Peng Chao has two residences, one in Maotai Town and the other in Renhuai City. It takes 5 minutes to drive from Maotai Town to the plant area. It takes 12 minutes to drive from the city to the factory. He lived in Maotai Town when he was very busy. He lives downtown when he is not very busy.

Wherever he lives, he is determined to get up at 5:30 every morning and drive out at around 6:30. The time of arriving at the factory must be around 7 o'clock.

There are no weekends or holidays in Peng Chao's work schedule. Colleagues go to work, and he goes to work. He goes to work while his colleagues rest. It has been 8 years since 2017, and his annual rest time has almost not exceeded 10 days. That is to say, he is on the way to work for 350 days out of 360 days every year. Of course, the off duty time is uncertain, sometimes it is 12 o'clock at noon, sometimes it is 6 o'clock in the afternoon, but usually it will work overtime until 10 o'clock at night.

His SUV has to fill a tank of oil every week. The car's odometer will increase by nearly 15000 kilometers every year.

From 2017 to 2020, he was a super brewer of Moutai Group, responsible for production technology guidance in China. In 2020, after becoming the chief winemaker of Moutai Group, he will be responsible for the production technology guidance of the whole plant. Whether "super" or "chief", he has three major tasks, namely, guidance, rectification and inheritance of liquor making technology.

When he went to the factory every day, Peng Chao went from one workshop to another. He didn't finish today, but he will continue tomorrow. After 29 workshops were completed, they started from the beginning again and again. During each round of wine baking, he was the busiest. In the cellar period, each workshop has a holiday, so he has to go to the workshop. Check whether fermented grains ferment normally, whether pit sealing mud is tight, and whether production tools are damaged. During the workshop holidays, the group will organize many production related meetings, which he has to attend and make reports or summary speeches.

Peng Chao, 56, has worked in Moutai for 39 years.

Before 2017, he was a winemaker, and before that, he was an ordinary winemaker, so his work was relatively simple. Every year, there are many holidays to travel. But after 2017, traveling has become a distant dream for him. Last year, there was a "big cellar period" only once in three years, and the workshop had the longest vacation - 15 days, Peng Chao didn't get a chance to take a rest, and he still drove in each workshop every day for 15 days. This year, the Spring Festival has a nine day holiday, and Peng Chao only did not enter the factory on the first day of the lunar new year.

He was responsible for guiding the company's liquor production, and Peng Chao understood the eight processes and 59 process operation links and key points of Maotai liquor production. He took "quality is the soul of life" and "brewing high quality life" as his original mission to guide the Maotai liquor making in an all-round way. By 2023, during the six years of service, the average output of the teams and groups in Maotai Distillery has reached 74.72 tons, and the average annual output of the teams and groups has reached 10.18 tons, both of which exceed the company's requirements.

Due to the late start of Heyixing Wine Branch, Health Wine Industry and Recycling Production Investment Company, the lack of experience of technical personnel, difficult conditions and other reasons, some teams had problems such as non-standard process operation and incomplete understanding of production. Peng Chao led the team to provide technical assistance to these branches and subsidiaries, effectively improving the production quality and management level of the branches and subsidiaries.

Peng Chao has provided theoretical and practical training to new employees, ordinary employees, team backbones, apprentices and other employees in different positions through masters' teaching, model workers' lectures, craftsmen's lectures, mentoring, on-site teaching, etc., and has trained more than 10000 people in total. In 2021, Peng Chao Innovation Studio won the title of "Guizhou Model Worker and Craftsman Talent Innovation Studio", in 2022, Peng Chao won the title of "Maotai Outstanding Talent Award", and in 2022 and 2023, he won the title of "Excellent Master and Apprentice" of Guizhou Maotai Wine Co., Ltd. Eight of his 20 apprentices have graduated.

On April 19, the third session of Guyu Talent Day in Moutai was held as scheduled, and the provincial "Peng Chao Skill Master Studio" was officially unveiled.

As the leader of the provincial "Peng Chao Model Worker Innovation Studio", Peng Chao participated in guiding dozens of innovative projects such as "Improving Production Process Control Capability Based on Visual Production Monitoring Platform", involving liquor production and starter production, covering comparison of raw and auxiliary material characteristics, process exploration, equipment and facilities improvement, mechanism research, etc. From 2019 to 2021, "Peng Chao Model Worker Innovation Studio" successfully applied for three patents, namely, "Ground Pot Saturated Steam Flowmeter System", "A Stacking Fermentation and Pit Fermentation System" and "An Automatic Grading Picking System", which promoted the informatization, automation, low-carbon and scientific development of Maotai wine brewing technology.
